connecting optical encoder to a10-16

I want to substitue pots with optical encoders, or atleast for now, with something that spits out pulses instead of variable voltage.

So I guess this means I wouldn't need the A/D maxim chip that connects to the joy worrior chip.

Question is, how would I connect an optical encoder to the chip?
